Niki's Chicken Salad
I have been making this chicken salad since I was 17. I love it! If you are not a fan of onions, it’s not for you! I use green onions, but it is just as great with red onion. I also LOVE to serve it on Hawaiian bread or rolls. The sweetness of the bread, the crunch of the almonds and the tangyness of the onion makes for the most heavenly sandwich. I have also been known to throw in some crushed pineapple from time to time! Chicken salad is great to take on a summer picnic, to the beach or as an anytime snack!
 To make this awesome chicken salad, you will need the following ingredients:
4 chicken breasts
4 lg green onions diced
2-3 cups mayo
25 raw almonds, chopped
2 Tbls dried parsley, flaked
1 tsp salt
1 tsp pepper
Begin by boiling the chicken breasts in a large pot with salt and pepper. When the chicken breasts are fully cooked, remove from pot and allow them to cool.

Once cooled, chop your chicken into cubes and place them into a med sized mixing bowl.
Add the green onions,
salt,
pepper,
chopped almonds,
dried parsley,
and your mayo. Mix, mix, mix well. Add more mayo, salt and pepper to taste.
Serve on a sweet bread like Hawaiian or raisin nut.
(Not raisin cinnamon, yuck!) or on a bed of fresh green lettuce.

Niki’s Healthy Sandwich!

Lot’s of friends ask me how I stay small cooking the way I do. Well, the answer is, I don’t eat most of it! I have small portions of my BubbleCrumb recipes and I don’t usually over do it. (Usually) I do make smart choices too! This is a sandwich I frequently enjoy for lunch!

To make this super healthy, low calorie sandwich, you will need the following ingredients:

2 slices of whole grain whole wheat bread

mustard

orange bell pepper diced

red onion thinly sliced

thinly sliced tomato

sprouts

1 slice soy cheese (American flavor)

avocado

thinly sliced cucumber

lettuce (I use red leaf)

(all ingredients are to taste, so I didn’t give measurements)

There is a specific order in which I layer the ingredients. It helps keep EVERYTHING together!!

Start by adding mustard to your bread. Mustard has zero calories, so go for it!

Now on one slice of bread add your bell pepper,

onion,

tomato,

sprouts,

cheese,

avocado,

cucumber,

and lettuce.

Top with the other piece of bread,

and Enjoy!!
