BubbleCrumb Tuesday Night Taco Bake!

Easy and Delicious! Your family will love this quick and easy casserole. Put it together Monday night, and bake it Tuesday! Serve with Fritos, green onions and sour cream! Sooo good! Try it!

To make this Taco Casserole, you will need the following ingredients:

2 lbs lean ground beef

2 cups elbow macaroni

1 chopped onion

1 (10.75 oz) can condensed tomato soup

1 (14.5 oz) can diced tomatoes

1 (1.25 oz) taco seasoning mix

4 oz shredded cheese (I used cheddarella)

2 cups crushed tortilla chips

sour cream

green onions (chopped)


In a large pan, cook ground beef and onions

Stir in tomato soup,

diced tomatoes,

And taco seasoning.

Stir to combine.

Add macaroni.

Spoon mixture into a 9×13 baking dish.

Sprinkle with crushed tortilla chips,

and top with grated cheese. Bake in a pre heated 350 degree oven for 35 minutes or until cheese is melted.

Garnish with green onion, sour cream and DON’T FORGET the




Steak Fajita Recipe!

How many times have you made fajitas and they just were not as good as the Mexican restaurant down the way? Well I am here to solve this problem for you! There are a couple of secrets to my delicious fajitas. The first thing is you must use a specific cut of meat, I use flank steak. The second thing is making sure your vegetables are cooked but still have a little crunch! The last thing is a great guacamole. I make my guacamole fresh with avocado, red onion, jalapenos, lime juice and salt and pepper. I also like to spice up my sour cream with adobo!

To make these ridiculously delicious fajitas, you will need the following ingredients:

1 1/2 lbs flank steak

1/2 cup vegetable oil

1/3 cup soy sauce

1/4 cup red wine vinegar

juice of 1 small lemon or lime

1 1/2 tbls Worcestershire

1 tbls Dijon mustard

2 cloves garlic minced

1/2 tsp black pepper

4 bell peppers (assorted colors)

4 onions

In a mixing bowl or cup combine 1/2 cup oil,

1/3 cup soy sauce,

1/4 cup red wine vinegar

lemon or lime juice,

1 1/2 tbls Worcestershire,

tbls Dijon,

2 cloves of garlic,

and 1/2 tsp pepper.

Now, mix, mix, mix!

Place meat in a Ziploc bag,

pour marinade over meat and refrigerate for 6 hours.

Slice peppers into strips,

and onions into rings.

In a pan with a little oil, cook the vegetables until soft, but still a little crunchy.

To cook the meat, preheat BBQ to med high heat (350). Cook 7 minutes on one side, then 7 minutes on the other. Let rest 7 minutes, then slice meat AGAINST THE GRAIN! The meat is really the star of this dish!

Serve on warm flour tortillas with guacamole, sour cream and vegetables!


Crock Pot Ribs!

I usually slow-bake my ribs in the oven. But there is nothing better than a “fix it and forget it” meal! Being able to start your dinner in the morning and freeing up your day is priceless!! This crock pot rib recipe is really good and super simple.

To make this Crock Pot rib recipe, you will need the following ingredients:

Ribs (pork or beef)

2 cups bbq sauce + extra to brush

1 cup ketchup

3 tablespoons apple cider vinegar (you can substitute white vinegar)

1/2 cup brown sugar

2 tsp Worcestershire

dash of hot sauce

salt and pepper to taste

Start by putting your ribs in a single layer on a baking sheet. Salt & Pepper to taste. Bake in a 400 degree oven for 15 minutes, then turn them over and bake another 15 minutes. This process will render the extra juice from the meat so the ribs do not BOIL in the crock pot.

In a medium sized bowl, combine bbq sauce,



brown sugar,


and hot sauce. Mix well.

Place browned ribs in the crock pot.

Pour your sauce over the ribs, and cook on high for 4-6 hours or low for 8-10 hours.

After the ribs are ready, brush with remaining bbq sauce. Broil in your oven until bbq sauce gets caramelized!

Fall off the bone tender!!


Super Delicious Steak Marinade!

This marinade is really fantastic! It gives just the right amount of flavor, without taking away from the steak!

This marinade would be great on Tri-Tip too!

To make this super delicious steak marinade recipe, you will need the following ingredients:

1 cup vegetable oil

1/4 cup soy sauce

1/3 cup red wine vinegar

1/4 cup lemon juice

3 tbs Worcestershire

1 tbs pepper

2 tbs Dijon mustard

1-2 onions sliced

2 cloves garlic chopped

In a mixing bowl or cup measure the oil,

soy sauce,

red wine vinegar,





and lemon juice.

Stir to combine ingredients.

Place onions in a gallon sized ziploc bag.

Add the steaks,

and the marinade.

Close up ziploc, and place in the refrigerator 6-8 hours or overnight.

Your family will love this marinade!


Niki’s Meatloaf Recipe!

To be honest, I have made lots and lots of different meatloaf recipes in my time. I have never been completely happy with any of them. I decided to take all of my “likes” and add a few favorite ingredients, and came up with this tasty meatloaf. I hope you like it as much as I do!

To make this meatloaf recipe, you will need the following ingredients:

1 1/2 lbs ground beef or ground turkey
1 egg
3/4 cup milk
1/4 cup shredded cheddar cheese
a handful of grated Parmesan (Please not from a can)
1 cup bread crumbs (I use Italian style)
1 tsp salt
1 half bell pepper diced fine
1 small onion or 1/2 reg sized onion diced fine
pepper to taste
2/3 cup ketchup
1/4 cup packed brown sugar
1 1/2 tsp mustard

In a large bowl, combine egg,


Parmesan cheese,

cheddar cheese,

bell pepper,


bread crumbs,


and pepper.

Mix to combine.

Add meat.

Using your hands, mix until all ingredients are combined.

Press firmly into prepared loaf pan.

In a small bowl combine ketchup,

packed brown sugar,

and mustard.

Mix well.

Pour mixture over meatloaf.

Place in a pre-heated 350 degree oven for 1 hour and 15 minutes.

Serve with mashed potatoes, corn and a green vegetable.


EASY Prime Rib Recipe!

This Prime Rib recipe was given to me by my aunt Gayle and uncle Paul. I have used it ever since! It really is foolproof! (Just ask my friend Lisa!) If you can heat an oven, rub some seasoning in a roast, you can MASTER this EASY recipe!!

To make this EASY Prime Rib, you will need the following ingredients:

1 5 lb standing beef rib roast

2 tsp salt

1 tsp black pepper

1tsp garlic powder

Allow meat to stand at room temperature for at least 1 hour.

In a small bowl, combine salt,


and garlic powder.

Rub the roast with the seasoning.

Place roast in a pre-heated 375 degree oven for 1 hour. Turn the oven off and leave the roast inside. DO NOT OPEN THE DOOR. Leave the roast in the off oven for 3 hours. This is where all the slow roasting, low temperature magic happens! 30 minutes before it is time to remove the roast, turn the oven back on to 375 to re heat the roast. Remove from the oven at the three hour mark. Let sit 10 minutes before slicing.


Creamed Horseradish Recipe!

There is nothing like a good creamed horseradish with a delicious beef roast! I especially love this recipe. It is so tasty! I hope you feel the same as I do when you taste this delicious accompaniment!
To make this delicious recipe, you will need the following:

1 cup heavy cream

1/3 cup prepared horseradish

1 tsp dry mustard

2 tsp balsamic vinegar

1/8 tsp salt

1/4 tsp sugar

Sour Cream (optional)

pour the cream in a bowl,

Mix on high speed until cream forms soft peaks.

In a separate bowl add horseradish,

The dry mustard,

The balsamic vinegar,


and salt.

Mix well.


Gently fold in whipped cream,

cover and refrigerate for at least 2 hours.

If you like a heavier sauce, after the sauce has chilled, you can add sour cream to taste before serving

Serve with your favorite roast or beef sandwich!
