I love tiramisu, and this recipe is an easy crowd pleaser! I add a little Kahlua for some extra wow!

(I always double this recipe)

To make this Easy Tiramisu Recipe, you will need the following ingredients:

1 4oz pkg cream cheese softened

1 1/4 cup cold milk

1 pkg (4 serving) Vanilla flavor instant pudding and pie filling

2 pkgs (3 oz each) lady fingers (Trader Joes always carries them)

1 cup brewed coffee cooled

1 tub thawed cool whip

2 shots Kahlua

Start by adding the softened cream cheese to a large bowl.

Add the pudding mix,

and the milk.

Beat, Beat Beat it! Make sure there are NO LUMPS.

Add the Kahlua and mix to combine.

Pour the coffee into a shallow dish, dip the lady fingers in the coffee.

Start the first layer of the tiramisu.

Spoon some of the pudding mixture for the second layer of the tiramisu.

Now a layer of cool whip. Continue the layers until you are out of ingredients.

On the last layer, I pipe the cool whip on top to create a pretty dessert!

Finish with some Cocoa powder or shaved chocolate.

Easy Halibut with capers "Costco" style!

This is any easy recipe made with things I already have stocked in my kitchen from Costco. It is a nice and simple fish recipe!

To make this Easy Halibut Recipe, you will need the following ingredients:

1 tablespoon olive oil (I use Costco’s Kirkland brand!)

2 8oz Halibut steaks (Costco individually frozen)

1/2 cup white wine (Costco has great deals on wine, but not all carry wine because of state laws. Here in CA we are golden!!)

2 cloves garlic

1/4 cup butter (I always buy the Costco BUTTER sticks in the blue boxes! Cooking and baking, I go through them like crazy!)

salt and pepper to taste

3 tablespoons capers, with liquid (I keep a BIG jar of Star brand capers in my fridge. Where else would I find a BIG jar at a great price? Costco!)

Start by adding 1 tablespoon olive oil to a frying pan. Heat the oil over med-high heat.

Fry the steaks until nicely browned on both sides. Remove from pan and set aside.

Pour the wine into the hot pan and use a spatula to scrape any browned bits from the bottom of the pan. Let the wine reduce a little.

Add 2 cloves crushed garlic. (picture obviously taken after wine consumption)

Add butter,

and capers with liquid. (Capers have a yummy flavor. It’s kinda a mix of lemon and pickle 🙂

Add halibut back to pan and coat with sauce. Cook until fish flakes easily. Do not overcook! Serve immediately.

I love to serve fish with Costco’s individually frozen ready to serve brown rice!

Easter Bunny Cake Recipe!

I have been making for years!! My aunt JoAnn made it when I was a little girl, and I remember thinking about it every Easter until I was old enough to make my own!

To make this fun Easter Bunny cake, you will need the following ingredients:

2 pre-made round cakes (1 box mix)

white frosting
2 large bags sweetened flake coconut

food coloring
assorted candy for decorating

ziploc bags

melting chocolate or melted chocolate chips

Start by making your cakes. Prepare your pans for the batter.

I use 1 box of strawberry cake.

pour you batter evenly into 2 round cake pans and bake according to box instructions.

after cakes are cooled, take one cake and cut out ears and bow tie.

assemble bunny

Spread frosting over the whole cake

add the white coconut to the face and ears of the bunny, leaving room in the ears for the pink color.

to make your colored coconut, put some plain coconut in a ziploc bag. Add some food coloring and MIX MIX MIX! Mix until you have the color you like. I use neon gel food coloring.

fill the inside of the bunny’s ears with pink coconut

fill in the bow tie with colored coconut of your choice. I like bright orange.

I like to add some food coloring to a bit of frosting to make the bunny’s eyes

I just pipe some frosting for the eye color, then put a piece of melting chocolate on top

for the nose, i just take pink coconut and shape it into a heart

for the bunny’s mouth and whiskers, I melt chocolate and put it in a ziploc bag. I cut off the tip of the bag, and create the face.

I use candy to decorate the bow tie. The finished cake is the perfect treat for Easter!
