To make this trifle recipe, you will need the following ingredients:
2 mangoes peeled and cubed
1 (20oz) can chunk pineapple, un-drained
1/3 cup coconut rum (I used Mailbu)
10 oz pound cake, crumbled
2 bananas sliced
Coconut Custard (recipe below)
1 1/3 cups sweetened flake coconut
2/3 cup macadamia nuts, chopped
To make the coconut custard, you will need:
1 cup sugar
1/3 cup cornstarch
2 cups milk
1 (14oz) can coconut milk
6 egg yolks
In a bowl combine mangoes and canned pineapple with juice.
add 1/3 cup Malibu and set aside.
In a med saucepan combine 1 cup sugar,
1/3 cup cornstarch,
2 cups milk,
can of coconut milk,
and 6 egg yolks.
Whisk mixture over high heat until boiling (stirring constantly) continue
stirring one minute after boil or until thickened.
After custard has thickened, put in an ice bath and stir occasionally until cool.
Now start your layers: Pound cake,
fruit mixture, (Make sure you saturate the pound cake with the rum juice. I used a ladle)
bananas and chopped nuts,
and custard. Repeat layers.
Top with nuts and coconut. Chill for several hours to over night.
