Such a simple recipe. What a great result!
To make this rice pilaf recipe, you will need the following:
1 cup white rice
2 cups (1 can) chicken broth
1 onion finely chopped
1 Tbls butter
2 Tbls olive oil
1/2 tsp dried basil or thyme
1/4 tsp salt
1/8 tsp black pepper
On med-high heat, melt butter in olive oil.
Add onions and cook and stir until they are translucent.
Add the rice and stir and cook for 5-6 min.
Transfer to a 1-1/2 quart baking dish.
Bring the chicken broth, salt, pepper and basil or thyme to a boil. (You can use the same pot you used for the rice and onion)
Pour the hot liquid over the rice mixture.
Cover and bake in a pre-heated 350 degree oven for 35 min.
Let the rice sit for 10 minutes before fluffing and serving. makes 4 servings.
Extra add-in’s that would be great are:
Peas, rasins, nuts or mushrooms! Be creative!
